Nana//Pumpkin Spice Bread


Yesterday morning was an Autumn tease.... I left the house to get the children all off to school under cloudy skies and cool air.... The neighbors have already started pulling out Harvest and Halloween decor, pumpkins are filling huge bins in the grocery store, and my instagram feed is full of people enjoying the beauty of the world changing... If you know me at all then you know Im utterly obsessed with Fall! Is that cliche?? Maybe, but I dont care! And since I cant decorate for the Christmas Holiday Season (our house belongings will be on their way to our new home in Sasebo, Japan) then our house will be full of orange and gold, pumpkins and breads and pies until then! My jeans are gunna hate me :P



So anyway, after saying "see ya soon" to 3 of the 4 littles, I ran to Publix and grabbed my 1st can of Pumpkin for the Season! Oh Happy Day! I also snagged some pumpkin seeds and pecans because I had a recipe turning over in my mind I wanted to try....



Vegan Banana Pumpkin Spice Bread with Maple Candied Nuts-- Yep thats right folks! And its so damn yummy....

Really it was my eldest daughters idea... My newest shipment of herbal teas an spices came in from Mountain Rose herbs (their products are incredible! Especially love their EOs... find them here: This was my first time ordering their Pumpkin Pie Spice and it is bliss! Find it here:

So you can only imagine my excitement to start playing with it! We are making pumpkin smoothies this weekend!

Anyway,, here is the recipe I came up with!

Heat oven to 350--- Parchment line a pie dish or oil a bread pan... (I like round bread so it fits on my cake stand!)

Grab a bowl and wooden spoon, or kitchen aide and paddle attachment (pretty sure Story threw my paddle away so im using a spoon! Toddlers...)

Add ingredients one at a time... Im simple and just threw it in the bowl in this order!

2 Spotty Bananas-- Mash them up

1/2 C Organic Pumpkin Puree

1/2 C Organic Brown Sugar (or white or coconut should work... I like the richness tho!)

6-7 Dates- Pitted and chopped

1/3 C Almond Milk

2 tsp Organic Vanilla

1 tsp Baking Soda

1 tsp Baking Powder

1/4 C Ground Flax

1-2 tsp Pumpkin Pie Spice (I eyeballed so it was probably 1 1/2?)

2 C Oat Flour (I used Gluten free oats and blended them in my Vitamix)

Pour into pan and bake for about 40 mins or until fork (or I use a chopstick!) comes out clean...



The last 15 mins of baking, make the nuts! I roasted some pumpkin seeds and pecans in a pan for about 5 mins on med heat- then mixed them with 1/4 C Organic Maple Syrup, a dash of vanilla and good sprinkle of Cinnamon! Toss on a small parchment lined cookie sheet and bake for about 10 mins!

Top your bread and wah-la! Scrumptious bread the whole Family will love!



I hope you try this and like it! The kids and hubby devoured it so I guess Ill be making some more this weekend! Or Pumpkin Muffins! Or Pumpkin cookies! O my.... I hear my jeans screaming in the closet.....
